This book was my first teacher in basic butchering of game and livestock. If you have to start with one book, or if you can only have one book, this is the one. It is the basics of everything from beef to rabbits, including lamb, which is the same as goat. It includes short chapters on preserving meat like smoking and pickling, as well as recipes and sausage making. This book launched me into meat smoking and sausage making and caused me to buy other useful references on those subjects. Once you begin processing your own meat you become less inclined toward waste - because it is your handiwork you are wasting. (The same applies to fruits and vegetables, BTW.) This book is absolutely indespensible reference for anyone who wants to butcher their own meat.<
