Tartaric acid is often used as an acidifier and natural preservative for marmalades, ice cream, jellies, juices, preserves, beverages, and more. It is also used as an emulsifier and preservative in the bread-making industry and in the preparation of candies and sweets. Tartaric acid is the preferred acid for adjusting acid levels in wine and the use of 3.8g per gallon adjusts acidity by +.1%.
